To elaborate world wide standards and/or codes of practice as may seem appropriate for meat hygiene.
Established as the Codex Committee on Meat Hygiene by the 8th session of the Codex Alimentarius Commission (1971). The terms of reference and the name of the Committee were amended by the 24th Session of the Commission (2001) to include poultry.
