About CCFH
At its first meeting in 1964, the Codex Committee on Food Hygiene (CCFH), agreed that it "will set forth basic principles for hygienic food production and, where feasible, microbiological standards for foods" (CCFH1 report, 1964)
The Committee’s core text is the General principles of food hygiene (CXC 1-1969), which includes guidance on the Hazard Analysis and Critical Control Points system (HACCP). CCFH work responds to emerging risks and evolving hazards including shifting patterns of microbial behaviour and contamination, and other developments relevant to food hygiene. The Committee also ensures its texts are kept up to date, in line with evolving advice from the Joint FAO/WHO Expert Meeting on Microbiological Risk Assessments (JEMRA).
