Joint CODEX/IOOC Meeting on the Standardization of Table Olives

The Joint Codex/IOOC Meeting on the Standardization of Table Olives (CXTO) was an ad hoc collaboration between the Codex Committee on Processed Fruits and Vegetables (CCPFV) and the International Olive Oil Council (now International Olive Council (IOC)), established with the express aim of elaborating a harmonized international standard for table olives. 

The Joint Codex/IOOC meeting convened twice: in 1971 and 1973.  

The two meetings, and subsequently the Codex Alimentarius Commission (CAC) sessions, discussed a minimum quality level for table olives which would be acceptable to all countries. These meetings also discussed quality classes, and debated processing methods and agents suitable for destroying all spores of Clostridium botulinum, in addition to addressing the issues of packaging and additives of table olives. The Standard for table olives (CXS 66-1981) was adopted in 1974 and amended in 1981. 

Further revisions were made to the Standard under CCPFV in 1987 and 2013.
